DELISHUS is the first genuine Spanish restaurant in the Hawkesbury, maitre'd, Jose Fernandez said.
Serving traditional Spanish cuisine with the laid-back style of tapas, it has brought a unique approach to dining out. For the uninitiated, tapas is a collection of shared, small-servings that combine to make a great meal.
"It is the only way in which you can enjoy tasting the wide variety of Spanish food," Mr Fernandez said.
Since Mr Fernandez and head-chef wife Sally opened Delishus in 2009, it has earned a reputation as one of the region's finest restaurants, offering a superb dining experience.
The vibrant and inviting restaurant is located at 122 Windsor Street, Richmond and offers diners the chance to discover a new mix of enticing flavours and real dining pleasure.
As you'd expect at a tapas bar, service at Delishus is quick, the presentation is excellent and the tastes are complex and divine.
Madrid-born Jose and chef Sally expertly select the menus for each season, and with summer in the air, the new menu is fresh and full of flavour.
"Fresh local produce and seasonal menus ensure only the best is served to you when you visit our restaurant," Mr Fernandez said. "We make everything: from our marinades to roasting our own peppers."
The incredible array of authentic dishes to suit any taste includes croquetas, made to Jose's grandmother's secret recipe handed down through the generations.
The atmosphere is great and word-of mouth is spreading fast.
The venue, a heritage building with old world charm and gorgeous high ceilings, is tastefully decorated with the fiery red and warm yellows of the Spanish flag.
You also have the choice of outdoor alfresco dining.
"Both Sally and I love food and have an understanding for good food," Jose said. "We give people the quality we'd expect when we go out."
Delishus is licensed and open six days (Tuesday to Friday and Saturday to Sunday).
